How to make banana cake

First Step:

When you start making the recipe you need to keep the eggs and all other ingredients out of the fridge you need to keep all these ingredients at room temperature except butter that needs to be cold. Here are the quantity of ingredients:

Use 2 cups of all purpose or whole wheat flour. Gently fluff the flour in the bag with a fork before scooping it into the measuring cup. Level off the flour with a straight-edged spoon or knife.
1 cup mashed bananas (only use big and sweet bananas)
2 eggs
½ cup milk + 2.5 tablespoons
100 grams unsalted butter

Second Step:

Preheat your oven to 170°C (340°F) for at least 15 minutes. If you have a fan-forced oven, then preheat it to 160°C (320°F).

Third Step:

Grease an 8-inch square baking pan and line the slides with baking paper. If you don’t have baking paper then spread some flour all over the pan and include its sides. Shake the pan well, then invert it and tap off any excess powder into your kitchen sink.

Fourth Step:

You have to keep in mind that the butter should be soft as well as cold. The most important thing is that the butter is cold and not very soft. Add 100 grams butter and 1 cup sugar in a bowl then you mix it up.

Make Batter

Fifth Step:

Beat them together until light, pale and fluffy. When it is done, the whole mixture will appear light in colour. You should not add sugar to the mixture at this stage. Keep this mixture in the fridge for sometime. Then continue to beat, and remember the most important thing, at this stage, the butter should not be melted.

Sixth Step:

Add 1 egg and 2 teaspoons vanilla essence. Gently mix until combined, then beat until well incorporated and creamy.

Seventh Step:

Next, add another egg and beat until the mixture is creamy.

Eighth Step:

Don’t overbeat the mixture once it becomes creamy.

Ninth Step:

Place a sieve over the mixing bowl. Add 2 cups of the flour you have chosen, ½ teaspoons baking powder, ½ teaspoons salt then mix it well. Then sieve them into the egg mixture and creamed butter.

Tenth Step:

Stir it lightly with a whisk. Then add ¼ cup milk and mix and then add ¼ another cup milk.

Eleventh Step:

Combine all the ingredients thoroughly, but avoid overbeating. During mixing, add 2.5 tablespoons of milk and continue mixing until well combined, then add 1 cup mashed bananas and then mix again until well combined and avoid over beating.

Bake Banana Cake

Twelfth Step:

Pour the batter into the lined cake pan. Gently tap the pan on the counter for a few minutes to release any air bubbles.

Thirteenth Step:

If you are using an 8 by 8 square pan, bake for 25 to 30 minutes. You can adjust the timing according to your preferences. If you use a different size pan the timing changes.

Fourteenth Step:

Then transfer the cake to a wired rack and left it cool for 10-15 minutes to prevent the bottom from becoming soggy and then cool completely before slicing and the cake is ready.
